You are India’s first French-qualified sommelier. How did the confluence of Indian roots and French refinement shape your approach to wine?
It was very advantageous. Indian homes have kitchens bursting with spices and fresh herbs, where everything is prepared from scratch. It helps us become more astute with recognizing a plethora of flavors and aromas right from childhood and all this can come in handy when talking about a wine.

As a judge at some of the most prestigious wine awards, what, in your expert opinion, makes a wine truly extraordinary?
To be honest and at the risk of sounding like a hypocrite, I find awards quite futile and I have judged at so many awards! Wine is a very personal choice, a subjective preference, therefore it’s not right nor valid to tell someone which wine is a “winner”. Outside of marking a wine for technical flaws, it makes little sense to label a wine as anything. The only thing then to go by is consensus - if everyone who has tried the wine likes it, then it's a good wine. However what separates a great wine from merely a good one is the ‘emotion of the moment’ - depending on the where and when a wine is uncorked and, most pertinently, with whom you share it, can all contribute to this ‘emotion of the moment’.

As a triathlete, do you think there’s a ‘perfect wine’ to pair with a post-race meal?
Oh no, but there is a perfect beer at the end of a race - any chilled one!

Wine education is close to your heart. In a world of instant gratification, how do you convince the new generation to savor the art of wine over fast trends?
I don’t. Everyone takes their own path to actualization. Some get there sooner, some a little later, but, in the end, just like with smart watches and timepieces, everyone ditches the seltzers and pops for a glass of something worthy of their intellect.

What's the most unusual wine pairing you've ever recommended that turned out to be a surprising hit?
I think it would be hard to pin it down as, once you have opened the doors of perception, you are open to any new tactile experience. Ice cream and Sauternes, Barolo affogato, Tokai Espresso Martini, Matcha and Grand Cru. Every time I think I have made a quirky pairing work, I am already onto the next one.

If you had to choose a wine that best represents your personality, which one would it be?
I hope that neither my personality nor the world of wines can ever intersect with such permanence. I have a different wine for every mood. Today I am feeling very Pinot and am looking forward to being more Port-like on the coming weekend.

Lastly, Wine is often called "liquid art." What’s the most 'artistic' bottle you’ve ever encountered?
Many brands go all out to create art to wrap their liquid - from Mouton’s annual labels to Nittardi’s wrapping paper! Some go minimalist while others go Baroque, in the end, everyone brings their artistic interpretation to the shelf. In the end, it is still about the liquid contained inside for once that has established its power and appeal, the rest, honestly, stops mattering.
